TRY SEAN’S LATEST DISH –
Tex-Mex Vegetarian Quinoa Salad
from Sean’s kitchen

In his own words:
“Just sharing another recipe. I made this last night. Delicious!”

INGREDIENTS:
• 2 cups cooked Quinoa
• 1 10oz bag frozen Corn, or one can corn, drained and rinsed
• 1 15oz can Black Beans, drained and rinsed
• 1½ cups diced Red Peppers
• ½ cup chopped Shallots
• ½ cup chopped Cilantro
• ⅓ cup fresh Lime Juice (about 3 limes)
• ¼ cups Avocado Oil
• ½ tsp Sea Salt
• ½ tsp Black Pepper
INSTRUCTIONS:
1. Cook quinoa as directed on package.
2. Cook frozen corn as directed on package.
3. Drain and rinse black beans, heat in microwave for 1 minute.
4. In a large bowl add quinoa, corn, beans, red pepper, shallots, and cilantro.
5. Mix well.
6. In a small bowl combine Lime Juice, Avocado Oil, Salt, and Pepper.
7. Whisk together and pour over salad.
8. Stir until combined well.
9. Serve warm or cold.
10. Enjoy!

PRIMETIME STAFF AND MEMBERS REACHING NEW HEIGHTS

Lots of PrimeTimers have achieved great things recently!

Members and workout buddies Missy Crosby and Cynthia Andereck, pictured at right, scored big in the recent Snee Farm Ladies’ and Senior Ladies’ Club Championship.  Cynthia (right) was awarded the Club Championship title, while Missy (left) took home the Senior Club Championship trophy!  Great job, ladies – those workouts are paying off!

You’ve surely seen Cammie Camp, pictured below, in the gym – first as a member since 2004, then as a cycling instructor, and now, she’s an ACE Certified Personal Trainer!  You’ll be seeing more of Cammie on the gym floor, and also teaching some of our Senior C.L.A.S.S. workouts.  Congratulations, Cammie – you’ve come a long way, baby!

Ben Carico, pictured below at right, and his dad Tom have been working out with Meredith since 2015.  Ben recently completed the W.I.T.S. program at TTC in personal training and obtained his certification.  We welcome Ben to our awesome team of trainers!

Easy Egg Salad with Greek Yogurt, Capers, and Dill

Ever since Mark and I decided to try “Meatless May” a few months ago, I’ve  been exploring new ways to enjoy old favorites. This easy egg salad recipe substitutes Greek yogurt and dijon mustard for mayo, and uses capers, tarragon, and dill to make it not only healthy but oh-so-tasty too!

INGREDIENTS

6 large eggs
¼ cup (2 oz/60 g) plain, low- or non-fat Greek yogurt
1 tablespoon roughly chopped capers
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh tarragon, dill, or chives, or a combination
Salt and freshly ground pepper

INSTRUCTIONS

Boil the eggs (if you’re like me you need instructions):

Put the eggs in a saucepan and add enough cold water to cover by a couple of inches. Bring to a boil, remove from the heat, cover, and let rest for 20 minutes. Drain the eggs and rinse under cold water. When cool enough to handle, peel.

Chop up the eggs – yolk and all.

Place the chopped-up eggs in a bowl and add the yogurt, capers, mustard, lemon juice, and herbs. Mix to desired consistency.

Serve with crackers or on your favorite bread as a sandwich.  Enjoy!
